Not Egg Salad

Not Egg Salad – phase 1-4, serves 4


4 tbsp Walden Farms Honey mustard mayo spread
2 tbsp spicy mustard
2 tbsp vinegar
1 tbsp olive oil
2 tsp celery seed
1/2 tsp lemon zest

1 20-ounce block of extra firm tofu
1 cup finely chopped button mushrooms
1 cup finely chopped celery
1/4 cup chopped chives
Sea salt and pepper to taste

In a large bowl, whisk together all the dressing ingredients. Using your hands, crumble the tofu into roughly 1/2″ pieces. Stir together with dressing and all other ingredients. Serve on a bed of lettuce or as a lettuce wrap.
