Ginger Stir Fry – phase 1-4 serves 2

2 boneless skinless chicken breasts

1 cup shredded bok choy

1 cup diced green bell pepper

1 cup sliced button mushrooms

2 cloves garlic diced

1/2 inch grated ginger

1 bag of Miracle Noodles

2 egg whites

3 tbsp Braggs liquid aminoes

3/4 cup Walden Farms Sesame Ginger Dressing

Pinch of red pepper flakes

Diced scallions as garnish

Pinch sea salt

Rinse and dry Miracle Noodles and then toss with 2 tbsp liquid aminoes.  Cut chicken into bite size pieces and toss with 1 tbsp liquid aminoes in separate bowl.

Heat non stick skillet to medium heat, add chicken and cook for 5-7 minutes.  Remove from skillet and set aside.
Add garlic bell peppers and ginger  to skillet over medium heat and cook for 2 minutes.  Add cabbage and mushrooms and sea salt cook for 10 min or until cabbage is wilted.  Remove veggies from skillet and set aside.

Add egg whites to skillet and scramble.  Add back the chicken , veggies,  Miracle Noodles and Sesame ginger dressing and heat through.  Add red pepper flakes and scallions and serve immediately.
