Faux Pasta Fresca (phase 1-4) serves 2
2 cups zucchini noodles
2 tbsp. olive oil
1 garlic clove, minced
1 scallion, chopped
2 medium plum tomatoes with juice, chopped
1/2 cup mushrooms, sliced
1/4 package firm tofu, 1/2 crumbled, 1/2 cubed
1/2 tbsps. sea salt
1/2 tsp. pepper
1/4 cup basil leaves, stacked, rolled, and chopped to create ribbons
2 tbsps. nutritional yeast
Shred zucchini on mandolin lengthwise into julienne (long strips). Put 2 tbsps olive oil & garlic in cold saute pan and turn on medium heat. When garlic starts to sizzle and turn a light brown color add zucchini and saute for 2 minutes.
Add mushrooms, chopped tomatoes and tofu to garlic and zucchini mixture. Season with sea salt and pepper.
Set aside 1/2 of basil and add the other half to pot. Cover, reduce heat to medium-low and simmer for 7-10 minutes. Remove from heat.
Garnish with scallions, remaining basil, and nutritional yeast.
