Tomatillo Salsa Eggs

Tomatillo Salsa Eggs –phase 1-4, serves 1

2 eggs+ 2-3 egg whites

1/2 cup tomatillo salsa

1 tbsp nutritional yeast

Sea salt and fresh-ground black pepper to taste

Olive oil cooking spray

Spray a non-stick skillet lightly with olive oil cooking spray.  Add 1/2 cup of tomatillo salsa and cook over medium heat for 4-5 minutes, or until the salsa is hot and starting to bubble.  Gently slide the eggs into the salsa, reduce heat to medium-low, cover the pan with a lid, and cook 3-4 minutes, or until the whites are firm and the yolks are still soft.  Sprinkle with nutritional yeast and serve immediately.

When eggs are done, season with sea salt and fresh ground black pepper.
