Summer Crab Salad – All Phases, Serves 2

  • 1 container of lump crab meat
  • 2 spring onions,thinly sliced
  • 1/2 small red onion, finely chopped
  • 2 celery stalks, finely chopped
  • 3 tablespoons Walden Farms mayo
  • 1 tablespoon lemon juice
  • 1 tablespoon white vinegar
  • sea salt and pepper
  • pinch of red chili flakes
  • head of boston lettuce

In a big bowl mix together crab, spring onions, onion, celery, mayo, lemon juice and vinegar. 2.Break up the lettuce and use it as “cups” to fill the salad in.
