Smoked Salmon Deviled Eggs (phase 1-4) serves 2
6 large eggs, hard boiled
4 tablespoons Walden Farms Honey Mustard Mayo
2 teaspoon Dijon mustard
1/2 teaspoon lemon juice
Black pepper & sea salt
6 ounces smoked salmon
Dill, chives or other fresh herbs, to garnish
Peel the eggs and cut in half lengthwise and discard 4 of the yolks. Place the remaining yolks in a small bowl. Add the honey mustard mayo, Dijon mustard, lemon juice, couple grinds of pepper & a pinch of sea salt. Using your hands, break up the salmon into small pieces and add to the bowl. Mash the mixture together with a fork until smooth and creamy. Taste and adjust seasoning.
Spoon egg yolk and mayo mixture into the egg white halves and garnish with fresh herbs before serving.
