Mini Chicken Meatloaf
Mini Chicken Meatloaf – Phase 1-4, Serves 2

1 pound ground chicken breast
1 garlic clove, minced
1cup button mushrooms, chopped
2 egg whites
1 packet Sour cream and onion zippers, crushed
2 tbsp nutritional yeast
1/2 cup Walden Farms marinara sauce
1 tsp italian seasoning
1/2 tsp sea salt
Preheat oven to 375°F.
In a large bowl, mix together all ingredients to thoroughly combine.
Pack olive oil cooking sprayed mini muffin cups with the mixture. Fill to the top as they will shrink a bit during cooking.
Bake for 15-20 minutes, or until golden and cooked through.
