1 small head cabbage, slice thinly (about 10 cups)
½ a white onion sliced thinly
1 lime, juiced plus extra wedges for garnish
2 tsp sea salt
Handful cilantro, chopped
Jalapeno pepper, diced, to taste
1 tbsp granulated stevia
1 medium cucumber

Slice the cabbage, onion and cucumber thinly, and in quarter moons. Dice the peppers
and roughly chop the cilantro.

Toss the chopped veggies with the pepper, cilantro, sea salt, stevia and lime juice. Let
mingle for 30 minutes. Toss well, before serving.
