Healing Ginger Chicken Soup

Healing Ginger Chicken soup – phase 1-4, serves 2-3

3 ribs celery, chopped

1 big handful of fresh ginger (about 8 ounces), unpeeled and sliced into big pieces

1 clove garlic

10 black peppercorns

1 16 oz can of low fat chicken broth

3 chicken breasts

Sea salt

handful fresh cilantro

serrano chili – optional

Put the celery, ginger, garlic, and peppercorns in a heavy large pot, then add the chicken.  Cover with 1 quart cold water  and 1 can of low fat chicken broth and bring to just a boil over medium-high heat.  Reduce the heat to low.  Skim off any foam that rises to the surface.  After about 30 minutes, remove the chicken breasts and set them aside to cool.  Continue to gently simmer the soup for 1 1/2 hours.

Strain the broth through a fine-mesh strainer into a bowl then return the broth to the pot. Cut chicken into bite size chunks and return to pot.  Simmer for another 30 minutes.  Season with sea salt to taste.   Serve garnished with cilantro and/or serranos.
