Chile Lime Tilapia

Chile Lime Tilapia – Serves 3, phase 1-4

For chile lime topping

2 tsp olive oil

1 tbsp finely chopped garlic

1/2 tsp finely grated fresh lime zest

1 tsp fresh lime juice

1 tsp minced fresh Thai or serrano chile (preferably red), including seeds

1/2 tsp sea salt

2 tbsp low fat veggie broth
For fish

6 pieces skinless tilapia fillet

1/2 tsp sea salt

2 tbsp vegetable oil


Make chile lime topping:
Whisk together olive oil, garlic, zest, lime juice, chile, broth, and sea salt in a bowl.

Prepare fish:
Pat fish dry and sprinkle with sea salt. Heat a 12-inch nonstick skillet over medium heat, spray with olive oil cooking spray then sauté 3 pieces of fish, turning over once with a spatula, until golden and just cooked through, 5 to 6 minutes, and transfer to a plate. Sauté remaining fish in same manner.

Serve each piece of fish with a dollop of chile lime topping.
