Chicken Soup with Ginger and Lemon Grass

This recipe was shared by one of my favorite people -Shirley.  Thank you Shirley for letting us in on this simple, healthy soup recipe.

Start with a whole chicken -Removed meat from the bones, slow cooked bones and skin, etc then made some wonderful broth.  Added about 1/4 inch (from a tube) of lemon grass, 1/4 inch (from a tube) of ginger, and some star anise (put in tea infuser) to the broth. Wonderful combination for complex flavor.

-You could also use a ready made chicken broth on those nights when you are in a hurry!
